In short, it is the amount of contrast that your camera can capture before loosing detail in the highlights or shadows. According to DXO Mark the 5D IV has a dynamic range of 13.6 stops at ISO 100.
The 5D Mark III had slightly higher resolution (22MP vs 20MP), but in almost every other detail the 6D’s sensor was superior. Shadow recovery, noise, high ISO performance, color science, and dynamic range were all better than the 5D Mark III, leaving me to write that article on why I chose the 6D over the 5D Mark III.
The Canon 6D Mark II is not much of an improvement over the original 6D and the ISO performance as a whole is inferior to the 5D mark IV. But, I have to be honest, I would have loved to have some extra dynamic range from time to time, and my Canon 5D Mark II, and then Mark III, have definitely fallen short of the competitors in this category.

The Canon 6D Mark II has a noticeably worse dynamic range than the Canon 7D Mark II. This means that you’ll capture less detail overall. That’s a big concern for landscape photographers in particular. Of course, the Canon 6D Mark II still offers a higher megapixel count than the Canon 7D Mark II (26.2 MP vs 20.2 MP).
The 5D Mark IV was a slight improvement over the 6D, but I had also become aware of how Sony’s sensors were better at handling shadows and high dynamic range scenes. Some Canon shooters were even starting to make the switch or contemplating the move. I had numerous Canon lenses, but I was seriously considering switching to Sony.
